My father has diabetes, does anyone know a good oatmeal cookie recipe using Splenda? - oatmeal and diabetes

OAT Cracker
Diabetic Recipes
Ingredients:
1 / 3 cup butter or margarine
1 / 3 cup brown sugar
1 / cup hot water 4
1 cup flour, divided 1 / 4 cup for later
1 cup quick oatmeal
1 teaspoon cinnamon
1 / 2 teaspoon baking powder


Instructions:
Cream butter and sugar well, then beat in the water. Set aside 1 / 4 cup of flour for rolling. The remaining dry ingredients, then mix in the cream.

Add the remaining flour gradually until firm enough to roll the dough. Divide dough into 3 equal pieces. Roll each piece of dough about / 8 inch 1 thick and cut into 12 equal pieces. This is much easier than trying to use a cookie cutter if you need to know cookies per serving.

Place in a lightly greased tray. Bake at 350 degrees about 10 minutes or until browned on the edges. Take from the pan and let cool. Store in a closed container.

Makes about 36 cookies.

I could not find just oatmeal cookies, but I found raisins. They are really delicious, I did it and you could not say that with Splenda. Well, here it is.

A friend of mine used Splenda instead of sugar in a recipe, just use baking Splenda and not great. She does it for our church and I have never been any complaints.
